BEEF BURRITOS

Fry one pound of grass fed ground beef, do not drain.

Let cool a few minutes, then put in food processor, pulse a few times until meat texture is fine. 

Return to pan, add 1/2 tsp salt, 1/8 tsp cumin and pepper.

Sautee one yellow onion in avocado oil until translucent and caramelized (about 10-15 minutes), add 1-2 cloves of garlic, cook until fragrant (about 1 minute)

Add onion and garlic to beef, also add 1 small can of green chilis, stir then fill two low carb tortilla shells with beef and roll up, (I use a toothpick to hold together) place into oven safe pan.

Heat approximately 1 cup of El Terrifico white cheese dip (I find this at Sam’s club) and pour over burritos, top with 1/2 cup of shredded from the block Land O Lakes white american cheese (I get this in the Kroger deli)

Bake on 400 degrees for approximately 10 minutes, then put oven on broil and cook until cheese is brown and bubbly.

Remove from oven, top with Rotel tomatoes and green chilis (or fresh tomatoes)

Serve with jalapeños and sour cream.
